The palate is very elegant and ethereal, despite the level of sweetness, with crisp, piercing acidity and delicate notes of ginger and orange peel. Producer Notes: Since 1992 Disznóko has been known as a pioneer of the Tokaji Aszú renaissance. Our aim is to produce wines with a perfect balance between the purity of fruit and the complexity of Botrytis cinerea, the richness and the freshness. The team constantly tries to understand and express the unique terroir of Disznóko through a range of diversified wines, from dry whites to Eszencia.

Vintage Notes

Long winter, late bud break and flowering, hot summer followed by a cooler and rainy September. The grapes started to ripen late and we had to wait for the appearance of the botrytis. From the end of September, the botrytis developed continuously on the grapes and brought plenty of great quality and very rich aszú berries.
Harvest Notes
Aszú berries are picked continuously from September to late October, and early November and usually macerated in November.
Winemaking
Each batch of aszú berries was vinified separately. About half of the berries were poured into an actively fermented must for 2 days for skin contact without crushing. The rest of the aszú berries were gently crushed and then soaked in a fresh wine or a wine at the end of its fermentation for 12 hours for skin contact. After a long pressing, the fermentation took place in stainless steel vats until the beginning of December.
Ageing
The Aszú wines are aged for around two years in oak barrels deep in our cellars. During the barrel ageing, we taste the wines regularly to see how they are evolving. Our 225 l barrels are made from Hungarian and French oak. Up to 30% of new barrels are used for our Tokaji Aszú ageing.
Producer Tasting Notes
Golden colour. Intense floral nose with notes of apricot, plum, and nectarine. Its structure is ample with good ripe acidity. Fresh fruits and citrus aromas.
