An emblematic Grande Champagne Cognac and a distinctive expression of the Delamain house style. Created in 1920 by Jacques and Robert Delamain, Pale & Dry XO takes its name from its unusually pale colour and elegant, delicate character. Made exclusively from eaux-de-vie sourced from Grande Champagne, Cognac's premier cru, it is crafted without added sugar or colouring and matured patiently in old oak to preserve purity, finesse and aromatic precision.
Production & Maturation
Pale & Dry XO is composed exclusively of Grande Champagne eaux-de-vie and matured in 350-litre old Limousin oak barrels in Delamain's centuries-old cellars on the banks of the Charente. Cellar Master Charles Braastad describes a progressive and meticulous reduction of the Cognac's ABV to 42%, designed to achieve a balance between power and natural sweetness. The use of old oak allows extended maturation while limiting overt wood influence.
