Our Old & Rare American Oak Second-Fill single casks have been matured for a minimum of sixteen years in a cask made from American oak, that has previously matured Sullivans Cove whisky. Second-fill casks allow for long-term maturation without being overtaken by the influence of oak or pre-fill. The result is a whisky of perfect balance: our signature spirit character harmonises seamlessly with the soft oak profile, allowing the fruity esters from our copper Alembic still, Myrtle, to shine through. In addition to the notes of bright fruit, confectionary and coconut, these whiskies exhibit a depth and refinement that can only come from age. As single cask bottlings, every tiny batch is different, expressing the unique characteristics of each barrel.
17 Year Old American Oak Second-Fill 'Old & Rare' (TD0107) was distilled in June of 2006 and decanted in January of 2024, maturing at 17 years and 5 months old in a single, 200L American oak second-fill cask. Bottled at 47.6%, this cask yielded just 192 bottles. As one of the oldest Australian single malt whiskies ever released, this bottling is a true piece of whisky history and has incredible texture, complexity and length of palate.
Each bottle comes in a unique, hand made, solid oak presentation box, and includes a letter of authenticity signed by our Distillery Manager, Heather Tillott.
