Sullivans Cove French Oak Single Tawny Cask Tasmanian single malt whisky has become a legend in its own right, one of the most sought after whiskies in the world, and the bottle that put the Australian whisky industry on the map after winning World’s Best Single Malt at the World Whiskies Awards in 2014.
Aged in 300L French oak casks previously used to mature Australian tawny port-style fortified wine, this whisky has rich flavours of Christmas spice, chocolate, dried fruit and complex oak. As a single cask bottling, every tiny batch is different, expressing the unique characteristics of each barrel.
Aged for Fourteen years and Two months in a 300 litre, French Oak ex-Tawny cask, TD0323 is a classic example of the Sullivans Cove French oak ex-Tawny style. Bottled unflocked and unfiltered at 48.1% abv this cask produced a mere 421 bottles.

Nose: A deep and toasty entry brings immediate notes of salted onion bhaji, dark chocolate, and antique furniture – classic French oak with a briny, Sullivans Cove spirit undercurrent. Notes of coffee and orange cake meet clove and toffee in the mid-section, while a herbal, tea-like, gingery note rests below all, sweetened up by nuances of date syrup.
Palate: The soft and supple Sullivans Cove spirit character opens the palate with a classic silky, decadent texture, balanced by aromatic and herbal wafts gained from the French oak ex-Tawny barrel. Gently and softly the palate swells, and there are deep and warm citrus notes immediately (mandarin and orange) met by expertly integrated oak spices and pops of pomegranate. As the palate progresses, the warm and juicy mandarin citrus quality stays solidly in place while notes of fig, lemonade, apple sauce and raisins move through one another. A spritzy and bright pop of grapefruit then emerges and takes you to the finish on a bed of coffee and toffee.
Finish: The light and supple, citrus-driven spirit character paired with the beautifully integrated tingles of oak spice really enliven this whisky, creating incredible dimension all the way through. As the swells of spice flow through the finish, there is a dark and delicious chocolate-oak quality that comes forward, met by more herbal, tea-like nuances, cacao fudge, light tobacco and chocolate-covered coffee beans.
